Tulum Treehouse Kitchen is a creative hub of culinary ways, techniques and traditions from the past gazing into a much-promising future. Celebrating the diversity of its homeland’s cuisine, this open-air restaurant serves dishes exclusively cooked over a wood-fueled open fire, placing corn, the heart and soul of the native cuisine, in the very centre of interest. The corn is finely grounded with the use of a traditional stone mill and is prepared with culinary techniques dating all the way back to the pre-Hispanic times, even using ancient forms of fermentation. Edoardo Fiaschi, the executive chef, who has worked in renowned global kitchens, including Noma, leads workshops, experimentations, creative discussions and artistic collaborations revolving around the future of food culture. Bar-wise they collaborate with the famous and multi-awarded Xinu, creating delicious cocktails that allow guests to actually taste the jungle in their glass.
